The Morning Ritual: A Review of Founders Breakfast Stout

There are "coffee beers," and then there is Founders Breakfast Stout. While the craft beer world is currently obsessed with pastry stouts that taste like liquefied candy bars, Founders has maintained a legendary status by doing one thing perfectly: balancing the bitter, the sweet, and the roasted.

Score: 7.8

Location: Grand Rapids, MI

ABV: 8.3%

The Pour

It pours like motor oil thick, opaque, and unapologetically black. The head is a dense, tan foam that looks exactly like the crema on a fresh shot of espresso. If you’re a fan of "lacing" on your glass, this beer delivers.

The Nose

The aroma is the best part. Before the glass even hits your lips, you’re hit with a massive wave of fresh roasted coffee beans. Founders uses a blend of Sumatra and Kona coffee, and it shows. Beneath the caffeine kick, there’s a hint of dark baker’s chocolate and a faint earthy sweetness.

The Taste & Mouthfeel

  • The First Sip: Unlike many imperial stouts that lean into heavy sugar, this starts with a bold, roasted bitterness. As someone who isn't typically a fan of cold brew or iced coffee, I was concerned the roasted notes might be too abrasive. Fortunately, I was wrong—the coffee is integrated perfectly without that 'stale' acidity you find in actual cold coffee.

  • The Middle: The flaked oats do the heavy lifting here, giving the beer a silky, velvety texture that coats the tongue. You get the "Double Chocolate" promised on the label think 85% cacao rather than milk chocolate.

  • The Finish: It finishes surprisingly clean for an 8.3% beer. The 60 IBUs (International Bitterness Units) provide a hoppy backbone that prevents the chocolate from becoming cloying.

Pro Tip: Don't drink this ice cold. Let the bottle sit on the counter for 15 minutes before opening. As it warms, the coffee recedes slightly and the creamy chocolate notes really begin to shine.

Final Verdict: 7.8/10

This is a foundational beer. It’s consistent, complex, and widely available. Whether you're pairing it with actual breakfast (I had it with french toast & salty bacon) or enjoying it as a nightcap, it remains the gold standard for the style.
